Food Challenge

I've been a little bored since RJ started school full time {and we hardly EVER see him} I've been coming up with some projects to keep me busy {and sane}. Since RJ is gone most nights, I wasn't doing much cooking. So, I started the Food Challenge. I'm trying a NEW recipe every night of the week and having the family rate it {so, it's fun for them and makes them try new things.}

Day 1
Spiced Pork Medalians
with fresh green beans

We started with a bang. Getting 4 thumbs up {meaning all 4 of us gave it a thumbs up}with this yummy dish. It took all of 20 minutes to cook and it was delish!

Spiced Pork Medalians with Bourbon Sauce:
 1/2 cup bourbon or reduced-sodium chicken broth
1/4 cup packed dark brown sugar
3 TB white vinegar
3 TB reduced-sodium soy sauce
2 garlic cloves, minced
1/2 ts pepper
1/2 ts chili powder
1/4 ts ground cinnamon
1/8 ts salt
1/8 ts ground allspice
1 pork tenderloin {1 lb} cut into 12 slices

In a small saucepan, combine  the bourbon, brown sugar, vinegar, soy sauce, garlic, and pepper. Bring to a boil; cook until liquid is reduced to 1/2 cup, stirring occasionally.

Meanwhile, combine chili powder, cinnamon, salt, and allspice; rub over the pork slices

In a large skillet coated with cooking spray, cook pork over medium heat for 4-5 minutes on each side or until meat thermometer reads 160 degrees. Serve with sauce.
